Coconut Clusters Recipe: A Simple Yummy Snack

I have 3 rules for snacks. And these coconut clusters meet all 3! #1- It must be delicious. #2 Easier the better (simple ingredients). #3- Quick to make. I am always looking for something to munch on that has some nutritional value (I eat way to many cookies). And when your kids and husband love it, it is always a win.

I found this snack at a party. I asked others if someone had made it, and the said it was from Costco. It looked pretty simple to make, so I looked at the packaging and ingredients and whipped up a recipe. We have been in love ever since.

It was intended to be for our hiking and backpacking trips but we seem to eat it all before we get on the trail. I seem to modify them a little each time I make them (depending on what I have on hand). So feel free to leave something out or add something new, and turn it into your own new favorite snack.

Tips

You really cannot go wrong when making these. They are so simple, but here are some extra tips that I have learned a long the way

  •  I have played with the times and temperature of these every time I make them. They do great at 350 degrees F. for 20 minutes but tend to be a little softer and chewy. Or you could try baking them at 250 degrees F. for 90 minutes for a little more crunchy.
  • Watch them closely. They can start to burn really easily.
  • Get creative. This is such a fun recipe. It is so versatile and can be transformed in so many ways.

Coconut Clusters

Prep 10 min Cook 30 min

YOU WILL NEED

2 Cups Shredded or Flaked Coconut

1/4 Cup Pumpkin Seeds

1/4 Cup Sunflower Seeds

1 Cup Sliced, Diced, or Slivered Almonds

4 T. Honey

2 T. Chia Seeds

4 T. Water

3 T. Coconut oil

Salt

* other things I have tried- Sesame Seeds, Flax Seeds, Walnuts instead of almonds, more and less honey.

Directions

Heat oven to 300 degrees F. Line a cookie sheet with parchment paper.

If your honey and coconut oil are nice and soft then skip this step. If they are hard then put them into a sauce pan until nice and runny. I personally like to heat them up so they will mix really easy.

Add the chia seed to the water. Let sit until the chia seed absorbs all the water.

Add the coconut, pumpkin seeds, sunflower seeds, and almonds into a mixing bowl. Mix and add chia seeds, mix again and honey and coconut oil. Mix until everything is well coated.

Pour onto parchment paper and spread evenly. Once nicely spread sprinkle salt on top. Put into oven

Once done, enjoy right out of the oven, or wait until cooled for a little more crunchy snack.
